Winning Olympic bronze with gluten-free gnocchi

Italian master chef Vincenzi Grippa cooked his way to the bronze medal in category A for individual exhibitors at the Culinary Olympics 2008 in Erfurt, Germany, with sophisticated gluten-free gnocchi made from Schär flour and a number of exquisitely prepared “normal” dishes. Between 19 and 22 October, approximately 1,600 chefs from 53 countries, of which 560 were individual exhibitors, fought for glory and medals at the 22nd Culinary Olympics (IKA). They competed in various disciplines and categories. The IKA is the biggest culinary exhibition in the world and takes place every four years in Germany, organised by the German Chef’s Association.
